How to Make Coffee Pancakes (Two Best Recipes)

There is this quote that says, “People who eat are the best kind of people.” I believe nobody can deny the fact that foodies are the best. Being a foodie makes you picky about your meals. If you are a foodie like me, you can not start your day without a good breakfast that cheers your mood. Breakfast is my favorite meal of the day. Recently, I have tried these new recipes of coffee pancakes, and they are exceptionally delicious.

When I first tasted these recipes, I was excited since then to share them with you all. Almost every foodie is a huge fan of carbohydrates, and pancakes are an amazing start to kick the tiresome day with a booster of energy.

It might seem funny, but I am always hunting for newer and better recipes for breakfast. Before getting started, I would like to mention the fact again that these recipes are not mine and are taken from different sources, but the names are given to them by me.

Coffee pancakes are fluffy, and the cherry on the top is you can taste your favorite coffee in them. Let me share the masterpieces without any further ado, and I bet you won’t regret trying these recipes at least once.

The Dainty Morning Treat

As the name can tell, this recipe is a treat to start the morning with. It is amazing yet easy to make. Another advantage is that it does not require fancy ingredients and is a quick one. Good food and that too made cheap is not less than a treat these days.

Ingredients:

  • All-purpose flour: one cup
  • Granules of instant coffee: one tablespoon
  • Egg: one
  • Salt: half teaspoon
  • Baking powder: one teaspoon
  • One cup of well-shaken buttermilk.
  • Chunks of strawberry and banana

Instructions:

Gear yourself up by arranging all the ingredients on the kitchen shelf and start making the mouthwatering pancakes.

  • Pre-heat the oven at not more than 250°C (482°F). It will keep the pancakes warm while you are busy cooking some more.
  • Take a bowl and sift the flour, baking powder, sugar, and salt in it.
  • Take another bowl and mix together the egg and buttermilk.
  • Now, add the instant coffee granules into the mixture of egg and buttermilk.
  • Blend the wet ingredients well.
  • Mix the wet and the dry ingredients together but be careful not to hurry. Mix it in small batches.
  • Unlike the cake mixture, leave some lumps in the final mixture.
  • Heat up the pan on medium heat and turn the flame low.
  • Spray or brush 1-2 tablespoons of butter in the pan.
  • Pour around 1-4th cup of the mixture in the pan and leave until bubbles appear.
  • Flip and cook the other side.
  • Plate your pancakes with the syrup of your choice. Sprinkle the chunks of strawberry and banana on the top, and it’s done.

The Coffee Pancake Blast

This recipe has also been one of my favorites for a few months, and I can’t resist making these pancakes at least twice a week.

Ingredients:

  • Egg: one large
  • Salt: a pinch
  • Butter: as per your taste
  • Sugar: 25 grams
  • Flour: 75 grams
  • Milk: 75 grams
  • Coffee: 75 grams

Instructions:

  • Prepare the coffee in the pot and pour it into the bowl to let it cool down.
  • Take the egg you set aside and separate the egg white and yolk into separate bowls.
  • Add the sugar into the egg yolk and whisk it till combined properly without any grains of sugar. The result will be a mixture with a creamy consistency.
  • Add flour, milk, salt, and coffee into the cream you just made out of egg and sugar but don’t stop mixing.
  • Beat the egg whites until soft peaks appear, and add them into the mixture you made earlier.
  • Cover the mixture with foil or a piece of clean cloth and set it aside for around 30 minutes.
  • The pancake mixture is ready for cooking. Take a pan and heat it on medium heat.
  • Brush the butter on the pan and let it melt.
  • Pour the pancake mix and let the bubbles appear.
  • Flip the half-cooked coffee pancake and cook the other side.

The quantity is sufficient for 3 persons serving. Stack 2 or 3 pancakes on a plate and top it with your favorite syrup and nuts and enjoy.
