Ingredients

For cake

  • 4 eggs
  • 3 cups grated carrots
  • 2 cups granulated sugar
  • 1 tsp vanilla
  • 1 cup raisins
  • 2 cups all-purpose flour
  • 1 cup chopped walnuts
  • 1 ¼ cups vegetable oil
  • 2 tsp baking soda
  • 2 tsp salt
  • 1 can crushed pineapple, well-drained

For icing

  • 2 cups icing sugar
  • 3 tbsp butter, softened

Instructions

  • In a large bowl, beat together sugar, eggs, oil, and vanilla until well mixed.
  • In a medium bowl, stir together flour, baking soda, and salt.
  • Combine the liquid ingredients, and beat them until they are well mixed.
  • Add pineapple, carrots, walnuts, and raisins to the mixture.
  • Grease a 12-cup Bundt pan or 13 x 9-inch (33 x 23 cm) baking pan, then pour in the batter.
  • Bake at 350°F (180°C) for 60 to 65 minutes if using a Bundt pan or 45 to 50 minutes if using a 13 x 9-inch (33 x 23 cm) baking pan.
  • Let the cake cool before spreading icing on it.

For icing

  • Beat together cream cheese, butter, vanilla, and icing sugar until smooth.
  • Beat the mixture until it is smooth.

This vanilla chiffon cake is extremely easy to make. It’s beautiful to look at and absolutely delicious. As all chiffon cakes tend to be, it’s light and airy in texture. It’s a light and airy cake that looks great but doesn’t weigh you down.

Ingredients

  • 5 egg yolks
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 cup egg whites (about 8 large)
  • 2 ¼ cups cake and pastry flour
  • ½ tsp cream of tartar
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • ¾ cup cold water
  • ½ cup vegetable oil

Instructions

  • Preheat the oven to 325° (160°C) to ensure your cake bakes evenly. Then move an oven rack to the lowest position.
  • Mix flour, sugar, baking powder, and salt in a large mixing bowl. Add cold water, oil, vanilla extract, and egg yolks. Beat mixture until blended.
  • In a large bowl, beat together the egg whites and cream of tartar until stiff peaks form. Beat 1/3 cup of egg whites, then fold them into the yolk mixture. Gradually incorporate the rest of the egg whites until everything is mixed well. Pour this mixture into a greased 10-inch tube pan.
  • Bake for 1¼ hours or until a toothpick inserted into the center comes out clean. Immediately turn the pan upside down onto a heatproof bottle or metal funnel.
  • Let the cake hang out for a couple of hours until it’s completely cooled. Give the sides of the cake a little nudge with a knife or metal spatula, and then remove it from the pan.
  • Lastly, spread the frosting on a cooled cake and spread some strawberries.

This is an absolutely stunning cake. It’s light, fluffy, and absolutely to die for. The beautiful glaze is also coffee flavored, so it’s perfect for the coffee lover in your life.

Ingredients

  • 5 egg yolks
  • 2 ¼ cups cake and pastry flour
  • ¼ cup cold water
  • ¼ cup instant coffee granules
  • 1 tsp salt
  • ½ cream of tartar
  • ¼ cup boiling water
  • 1 tbsp baking powder
  • 1 ¼ cups granulated sugar
  • ¼ cup vegetable oil
  • 1 cup egg whites (about 8 large)

Instructions

  • Preheat the oven to 325°F (160°C). Place an oven rack at the lowest position.
  • In a small glass measuring cup, combine coffee and boiling water. (Hot liquids cool quickly when stirred, so do this just before serving.)
  • Combine flour, sugar, baking powder, and salt in a large bowl. Add water, oil, and egg yolks; beat with an electric mixer until smooth. Set aside.
  • Place the egg whites in one large bowl and beat with clean beaters until stiff peaks form about 2 minutes.
  • Fold one-quarter of the beaten egg whites into the yolk mixture. Fold in the remaining egg whites, a little at a time, until no streaks remain. Pour into an ungreased 10-inch tube pan.
  • Bake for 75 minutes. Let the cake cool completely in the pan, then turn it upside down and hang it from the legs attached to the pan or from a bottle until completely cool.
  • Turn out onto a cake plate, bottom side up. Run a knife around the inside of the pan and tube.
  • Lastly, spoon some glaze on top of your cooled cake. And you are done!
