If your kitchen situation is anything like mine, your muffin tin must be gathering dust on the top-most shelf as it is seldom used. However, I recently discovered that there is no written law about not using muffin tins for recipes other than muffins! Shocking news it is!
Anyways, after coming across a couple of recipes that can regularly make use of my muffin tin, I took it out and dusted it thoroughly. I gave a shot at a few of these recipes, and the results were amazingly delicious.
My daughter and I loved every bit of breakfast and dessert recipes that we tried using our muffin tins. It would be best if you tried out all the muffin tin recipes listed below.
1. Vegetarian Sushi Cups
This muffin tin recipe makes excellent bite-sized appetizers.
Ingredients
- Sushi rice (1 cup)
- Rice vinegar (3 tablespoons)
- Sesame oil
- Soy sauce
- Sriracha (half tsp)
- European cucumber
- Avocado
- Carrots (peeled and diced)
- Green onions
- Cilantro
- Ginger
- Garlic
- Sesame seeds
Method
Boil the rice and let the water get absorbed in it. Mix the rice vinegar to make the rice sticky. Now line the muffin tins with parchment paper and a little bit of nonstick spray. Divide the rice in all the tray cavities and press them to make the shape of a cup.
Refrigerate the muffin tray for 30 minutes so the rice is set. Meanwhile, mix all the ingredients of the sushi filling. After 30 minutes or when set, take out the mini rice muffins and arrange them on a large platter. Now divide the filling in the rice and cups, and your vegetarian rice sushi is ready.
2. Mini Pot Pies
Pot pies are usually consumed quickly by all. This recipe is going to make the task of making pot pies easier than anything. You will need:
- One tube of refrigerated biscuits (8-count ones).
- One can of any cream soup (cream of chicken/potato/celery).
- 2 cups of frozen veggies.
- Salt and pepper (to taste).
Directions
Have your oven preheated to 350°F and line your muffin pan with oil. Now take one biscuit, flatten it in your palm, place it in the pan, and press it down and around the sides. Set the tray aside while mixing veggies, salt and pepper, and soup in a large bowl.
Fill the biscuits in the pan with your filling and bake for about 20 minutes. Cool and serve the best mini pot pies.
3. Ice Cream Cupcakes
Who does not love ice cream? The ideal way to eat ice cream is to combine it with the best cupcake flavor you like. For this, you need:
- Half a packet of Oreos
- Salt
- Melted butter (6 tbsp.)
- Vanilla ice cream (softened)
- Chocolate ice cream (softened)
- Whipped cream
- Sprinkles
Instructions
Crush the Oreos with salt in the food processor and mix in melted butter. Fill the muffin tins with about 2 tbsps. of the prepared cookie crumbs and top with a layer of vanilla ice cream. Put another layer of cookie crumbs, and then let it sit in the freezer to set. Add another layer of a scoop of chocolate ice cream and place in the freezer.
Once set, remove the pan and top it with whipped cream and some sprinkles.
4. Poached Eggs
One of the best things about making poached eggs in muffin tins is that you can serve all the guests in a go. You need a nonstick spray, cooking oil, and a dozen eggs. Preheat your oven to 350°F while also spraying the muffin tray with cooking oil. Add about one tablespoon of water to each muffin cup and crack an egg into them.
Let them bake for 13 minutes or so, and your perfectly poached eggs are ready to consume.
5. Bacon and Eggs Cup
This is an instant hit with kids and adults alike. You need 16 bacon strips, about eight eggs, and salt and pepper for preparing this. Prep your oven by preheating the oven to 400°F. Line the muffin tray with aluminum foil, arrange the bacon strips by the perimeter of the cup, and bake them to prepare bacon cups.
Prepare 8 cups by this method and then crack an egg into each one of them. Sprinkle some salt and pepper and bake for 10 to 12 minutes. Serve when still warm, and enjoy the crispy bacon with gooey eggs.
6. Tater Tots
Tater tots are popular amongst kids. Now, prepare bite-sized tater tots with bacon and cheese for the whole family. Boil the potatoes in a pot and preheat the oven to about 425°F. After the potatoes cool down, grate them and mix in garlic powder, salt, flour, olive oil, and black pepper. Hand-mix all the ingredients and then add bacon, cheese, and chives.
Line the muffin tins with nonstick spray and fill in with about two scoops for prepared grated potatoes. Press them flat while laying down in the tins with fingers and bake for 12 minutes. Take them out, spray with the nonstick spray on both sides of the tater tots, and put them back to bake for another 12 minutes or until they are golden brown. Serve with sour cream for delectable results.

The best part about muffin tins is that they are just about the right size – whether you poach eggs in them or bake yummy tater tots or bacon eggs, they turn out to be enjoyable bite-sized dishes to savor.
