Once you get addicted to the taste of coffee, there is no going back. If you are a coffee enthusiast like me, you can probably relate to the craving of adding coffee to everything. Surprisingly (or not!), coffee goes very well with many desserts and sweet snacks. Having a sweet tooth is just a cherry on top for people like me.
I love experimenting in the kitchen. It excites me to mix different flavors and see what it tastes like. My love for coffee knows no bounds. It won’t be wrong to say that I dream about coffee with open eyes. Such dreaming has rewarded me with a lot of new, delicious recipes. During one such culinary adventure, I stumbled upon two wonderful recipes for coffee cookies. That’s right; you can enjoy the lovely coffee flavor with your evening tea too.
Cookies are everyone’s favorite munching snack. You just pick up one and eat on your way to work or school. They are easy to make in large quantities and can be stored for a few days. Coffee cookies are just another variation of regular cookies but with a twist. I decided to share my treasured findings with you all so that you can enjoy these cookies with every cup of tea.
Basic Coffee Cookies
As the name suggests, this recipe consists of all the essential ingredients of cookie dough with the addition of dry coffee. They are super easy to make and serves everything that a good cookie does.
Ingredients
Cookie Dough:
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 egg
- 1 ½ cups all-purpose flour
- ½ cup butter or margarine (softened)
- 1tablespoon instant coffee granules (dry)
- 1teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chopped pecans (optional)
- 1bag (11.5 or 12 oz.) semisweet chocolate chunks (2 cups)
Coffee Drizzle:
- 1/2teaspoon instant coffee granules (dry)
- 1tablespoon water
- 1/2cup powdered sugar
Method
- Preheat your oven at 350° F
- Take a large bowl and use an electric mixer to beat both types of sugars, egg, and butter. Use a spatula to stir the mixture until a creamy consistency is obtained.
- Add flour and keep on gently mixing it. Add coffee, salt, pecan nuts (optional), and chocolate chunks. Gently fold everything so that the mixture looks the same everywhere.
- Take a large cookie sheet, drop cookie doughs of about ¼ cup and 2 inches wide. Make sure that the cookie sheet is ungreased.
- Put the cookie tray in the oven and bake for about 12 to 15 minutes. Once the edges are set and the cookies get a nice golden brown color, take the tray out and let it cool for 5 minutes. Remove the cookies from the tray and spread them on a wire rack. Give them another 30 minutes to cool down completely.
- In a pan, dissolve coffee in water. Add in sugar and mix well. Drizzle this coffee sauce over the cookies to get extra flavor. You can skip this step altogether if you prefer dry cookies.
Eggless Coffee Cookies
For people who can’t stand anything made up of eggs, this is the perfect recipe for you to enjoy coffee-flavored cookies. They are crispy on the outside but chewy on the inside, making them just fabulous to eat.
Ingredients:
- ½ cup Sugar
- ½ cup Butter
- 3 tbsps milk
- 1½ cup All-purpose flour
- 1 ½ tsp Baking powder
- ½ tsp Cinnamon powder
- 1 tsp Instant Coffee
- ¼ tsp Nutmeg powder
Method:
- Add 1 teaspoon of coffee into 1 tablespoon of hot milk and keep it aside for later.
- In a bowl, add flour, baking powder, cinnamon, and nutmeg and mix it well.
- In another bowl, beat butter with sugar until it gets fluffy. Add in the milk and coffee mixture and beat again.
- Add the dry mixture into the wet one and make a dough. If it is needed, add the remaining milk to get a perfect dough. Keep the dough in the refrigerator for 30 minutes.
- Take small portions of dough and shape them into round balls. Flatten them a bit and place them on the baking tray. Sprinkle a bit of cinnamon powder on top.
- Bake them in a pre-heated oven at 350 ͦ F for 15 to 20 minutes.
- Let the cookies cool on a wire rack and store in air-tight jars to snack on them later.

Coffee cookies are just what I needed to satisfy my coffee cravings paired with a cookie’s sweetness. You can be creative with these recipes and add nuts, raisins, and chocolates of your choice.
