Ensaymada sweet soft bun recipe weekend coffee treat

Coffee alone is good but accompanied by cake or pastry is even better. For this coffee weekend treat, we were inspired by the delicious Ensaymada or known as a soft sweet dough pastry. The same with cinnamon which a great pair of coffee Ensaymada is also a perfect mate for coffee or tea.

Ensaymada is a traditional Filipino pastry that is often paired with coffee or tea. This pastry was introduced during the Spanish colonization in the Philippines. In the Island of Majorca, the ensaïmada de Mallorca is traditionally made of flour, water, sugar, eggs, and pork lard, while the Philippine adaptation of Ensaymada was made with butter instead of lard.

This traditional soft bun is usually topped with grated cheddar cheese, and it is a popular treat during the holiday season. Hence we are now fast approaching to the Holiday season, Ensaymada is the perfect weekend coffee treat that is a good pair of the season favorite drink PSL.

Ensaymada Recipe Weekend Coffee Treat

Ingredients

  • 1½ teaspoons sugar
  • ¾ cup warm water
  • 4 tsp. active dry yeast
  • 1 cup all-purpose flour
  • 1 cup butter, softened
  • ¾ cup sugar
  • 1 Tbsp. salt
  • 8 egg yolks
  • 4 cups all-purpose flour
  • Melted butter for brushing grated cheese

Instructions

  1. Dissolve the sugar in the warm water. Add the yeast and let stand until softened
  2. Add 1 cup flour gradually until well blended. Cover bowl with a damp cloth and set aside in warm place for 30 minutes.
  3. Meanwhile, cream butter and sugar thoroughly; add salt and egg yolks, beating well after each addition.
  4. Add 4 cups all-purpose flour gradually, blending well. Add this mixture to the sponge yeast. Mix well.
  5. Put the dough in a lightly greased bowl and cover with a damp cloth and let rise in a warm place for 2 hours.
  6. Punch down. Divide dough into the desired size of rolls. Roll out thinly.
  7. Spread surface with melted butter and sprinkle with grated cheese.
  8. Roll as in jelly roll, starting from the lower left-hand corner
  9. Place in greased ensaymada molds. Let rise for 2 hours.
  10. Bake in a preheated oven at 400 °F for from 10 to 15 minutes.
  11. After taking out from the oven, brush with butter and sprinkle with grated cheese and sugar.
  12. Yield: 2 dozens.
