Fudgy Chocolate Brownie Cookies

When it comes to my favorite desserts, I’m a pretty simple gal. I know that if I’m craving something sweet, I can reach for a brownie or cookie any time of the day and be satisfied. It’s a classic indulgence that never goes out of style. I have tried several recipes to make fudgy chocolate brownie cookies in the easiest way possible. Although it took me several trials and errors, I finally landed on the perfect recipe to make scrumptious fudgy chocolate brownie cookies.

It’s easy to make, and you probably already have everything you need to make it in your pantry without even having to run to the grocery store. All you need are:

  • 1/2 cup melted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 cup white granulated sugar
  • 1/2 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 3 tablespoons vegetable oil
  • 1 egg
  • 1/2 teaspoon salt
  • 1 1/3 cups all-purpose flour (or plain flour)
  • 1/3 cup semi-sweet chocolate chips

Instructions

Step 1

Preheat the oven to 350 degrees Fahrenheit.

Step 2

Line two cookie sheets with parchment paper.

Step 3

Mix cocoa powder, white sugar, butter (melted), and vegetable oil in a medium bowl. Add egg and vanilla extract and stir until thoroughly combined.

Step 4

Add flour, baking powder, and salt. Make sure to mix the dry ingredients in first before stirring them into the wet ingredients until a dough forms. Fold in chocolate chips or chunks.

Step 5

Using a cookie scoop or ice cream scoop, spoon out 1 or 2 tablespoons of dough onto the prepared cookie sheets. Press the cookies down as thick/thin as you want your cookies to come out.

Step 6

Bake the cookies in a hot preheated oven for 10 to 12 minutes, or until golden brown on top. And yes, be careful not to overbake (they will dry out).

Step 7

Once done, give them some time to cool down on the cookie sheet (10-15 minutes) before transferring to wire racks to cool completely.

The best thing about this recipe is that you don’t have to melt any chocolate, wait for the dough to chill, beat eggs, etc. It is so easy that even my daughter can make it!

You can also pair these gooey cookies with a cup of piping hot cappuccino.
