Kopi Luwak, also known as civet coffee or cat poop coffee, consists of partially digested coffee cherries that are then defecated by a cat-like animal called the Asian palm civet. The taste of the coffee depends upon the source of the beans and the roasting process. Kopi Luwak has an earthy, sweet, aromatic taste with a little hint of chocolate.

Origin

Kopi Luwak was originally found by Indonesian farmers in the early 1700s while working on Dutch plantations. Basically, Indonesians were not allowed to pick up coffee beans for themselves, so they opted a different way by picking them out from a cat excretion. They would further wash, roast, and brew them. It became very popular among the natives, so the Dutch started to carry out the process on their own and gave their name to this coffee. As a result, it became very much in demand all over the world among coffee lovers.

How are the Kopi Luwak Beans Created?

Civet kopi luwak

The civets are the main component of making this coffee. This cat-like animal thoroughly selects the best coffee cherries and ignores the low-quality ones. As a result, Kopi Luwak only contains the world’s best quality coffee cherries. It is further improved by passing them through the digestive system of the civet. There is a special enzymatic process happening where the acid interacts with the beans making them less acidic and smoother.

The outer layer of coffee is removed and thoroughly cleaned. After the beans are cleaned, they are roasted at a high temperature (over 400 Fahrenheit). This ensures that it is 100% safe to drink.

It’s one of the rarest and expensive coffee selling around $80 in the United States. Some critics call Kopi Luwak the worst-tasting coffee, specifically because of its origin and high prices. There are also some animal rights concerns regarding the treatment of captive civets and their population worldwide.
